Artichoke Stuffed Chicken
     Ingredients:
                2 c bread crumbs                      6 chicken breasts
                8 oz ricotta cheese                  8 oz cream cheese
                1 (14oz) can artichoke hearts, quartered & drained
                1 package Spinach Artichoke Dip Mix
 Directions:
        Preheat oven to 375F. Pound chicken breasts and coat one side
    of each with bread crumbs. Combine cheeses, artichokes, and
   Spinach Artichoke Dip Mix. Spread equal amounts of mixture on
   each chicken breast (on the side without the coating). Roll up each
   chicken breast and secure with toothpicks. Placed in greased casserole
   dish and bake for ~40 minutes or until chicken is thoroughly cooked.
   Let stand 5 minutes before serving.
