Artichoke Goat Cheese Frittata
     Ingredients:
                1 TBSP olive oil                           1 c onion, diced
                3 eggs                                         1 ¼ c egg substitute
                4 oz nonfat Greek yogurt          1 oz Goat cheese
                1 package Spinach Artichoke Dip Mix
                1 (14oz) can artichokes, quartered & drained

 Directions:
        Preheat oven to 400F. Heat 1 TBSP olive oil in oven-safe skillet
  and sauté onion until transparent. While sautéing, whisk together eggs,
  egg substitute, yogurt, artichokes, and Spinach Artichoke dip mix in a
  medium bowl. Add salt/pepper to taste. Increase skillet heat to high
  and add egg mixture. Cook, stirring gently for a few minutes letting the
  bottom just begin to set. Crumble goat cheese on top and place skillet
  in the oven for 10-15 minutes to allow the frittata to set.
  Let rest before slicing and serving
