Spinach Chipotle Pinwheels
     Ingredients:
  1 package Spinach Chipotle Dip Mix      1.5 lb thinly sliced turkey breast
     8 oz sour cream                                   6 large tortillas
     8 oz cream cheese                      2 large tomatoes, cored and sliced
 6-8 pieces trimmed lettuce           12 slices cheese (Colby Jack or similar)
 Directions:
     Prepare Spinach Chipotle dip mix by blending with cream cheese and
  sour cream. Set aside. Lay tortillas on work space. Spread each tortilla
  with a thin layer of Spinach Chipotle spread, fully covering one side.
  Distribute remaining ingredients evenly for each tortilla, adding them to
  lower 1/3 of tortilla. Tightly roll each tortilla and secure with a
  toothpick. Lay each wrap in a baking pan and chill for one hour. Cut into
  1-inch circles to create Pinwheels before serving. Serve with remaining
  spread. To make a vegetarian version, substitute turkey for 1 (14oz) can
  of drained black beans.
